Vegetarian Chili

Ingredients:

2 medium onions, chopped
1 medium sweet red pepper, chopped
1 cup chopped celery
1 cup frozen or fresh corn kernels
4 garlic cloves, minced
1 can Italian stewed tomatoes, cut up
1 can (15 ounces) tomato sauce
1 can (15 ounces) black beans not drained
2 tablespoons chili powder
1 tablespoon sugar
1 teaspoon salt

Directions:

In a pot, saute onions, peppers, corn and celery in 2 tbsp oil until tender.

Add garlic; cook 1 minute.

Stir in tomatoes, tomato paste, beans and seasonings.

Bring to a boil over medium heat, stir regularly to ensure bottom
doesn't burn.

Reduce heat; cover and simmer 30-60 minutes or until thickened,
stirring occasionally.
